Advent Challenge, Day 8; Sausage and Cranberry Stuffing

A traditional Christmas dinner; Turkey, Sage and Onion stuffing, Roast Potatoes, Brussel Sprouts, Pigs'n'Blankets. Always a comforting sight and experience. But to be honest, after 20 years of the same meal, sometimes it just needs something a little different. I always look forward to the stuffing (not a big fan of the turkey, too dry) but after a while even the Sage and Onion gets a little tedious. So here is a a little change for you. These stuffing balls are easy to make, tasty and totally traditional.

1 onion, finely chopped
25g of butter
2 slices of bread, crumbed
200g of sausage meat
1 apple, peeled and grated
200g of cranberries
50g of pistachios
4 sage leaves, finely chopped
1/2 tbsp of mixed

1. Preheat oven to 200C 
2. Saute the onion in the butter. Once softened, add the breadcrumbs until the excess butter is soaked up. Leave the mixture to cool.
3. Tip the mixture into a bowl and add the sausage meat, apple, cranberries, pistachios and sage. Mix well.
4. Take a tbsp of the mixture and roll into a ball. Repeat with the rest of the mixture and place the balls on a baking tray.
5. Bake for 40 minutes or until evenly browned all over.
