Advent Challenge, Day 2: Mulled Wine

Now that its winter, its time to get all of those wonderful winter fragrances flowing through the house, and nothing does that more than making some of your own mulled wine. Great for those Christmas gatherings, keeping you warm on those cold nights and brilliant for making desserts. I remember the first time I ever tasted mulled wine, I was working at a local cafe. It was snowing outside and as soon as I entered the door, I could smell Christmas. It turns out the chef was making mulled wine soaked pears to accompany the Christmas dinners. I think thats the only way to describe it, Christmas in a glass. So heres my recipe for your very own Mulled Wine. Enjoy

Mulled Wine Recipe
2 bottles of  red wine (make sure its red wine that you wouldnt mind drinking)
3 oranges, 1 whole, 2 cut into 8ths
2 lemons, quartered
ginger, peel and grate
cloves, pinch
cardimon pods
fresh nutmeg, grated
cinnamon stick
100g of your choice of sugar (I like to use brown sugar, I think it gives a richer flavour)
honey, to taste
1 pint of water
a dash of liquor (optional, to taste) I like using a good Brandy, but Quantro or even Malibu would taste as nice. Its entirely your choice

1. In a large saucepan, add all the ingredients except from the honey and liquor. Place on a medium heat and simmer for 10 minutes.
2. Lower the heat and cook, just under a simmer for another 20 minutes.
3. Taste, then add honey and liquor accordingly.
